I've been a chef/sous at several restaurants in these 15 years, including Thai, French, and American fare. Taking bits from my own families lineage of Ireland and Germany along the way. An old chef's saying; K.I.S.S. "Keep It Simple, Stupid." Reminding you that it's easy to go too far or over complicate things, when it's not necessary
