Chef Edwin Robles is a Napa Valley–based Executive Chef with more than 20 years of experience in fine dining and luxury hospitality. Originally from Bayamón, Puerto Rico, he has built an impressive career rooted in culinary excellence, innovation, and a passion for creating unforgettable dining experiences.

Throughout his career, Chef Edwin has had the privilege of working alongside some of the industry's most celebrated chefs, including the Voltaggio brothers, José Andrés, Wolfgang Puck, and Michael Chiarello. These experiences have shaped his culinary philosophy, combining refined technique, creativity, and a deep respect for exceptional ingredients.

His expertise has also taken him behind the scenes of some of the world's most prestigious events, including the Academy Awards (Oscars) and the Grammy Awards, where precision, teamwork, and excellence are essential.

Known for his leadership, attention to detail, and personalized approach, Chef Edwin creates bespoke dining experiences that are thoughtfully tailored to each client and occasion. Edwin and his team, Kalide and Sean, were all incredibly nice and welcoming—super friendly from start to finish. Edwin’s background is fascinating, and his experience working alongside some very famous chefs has clearly helped him hone his craft. He is a truly exceptional chef. The meal he prepared was extraordinary from beginning to end, and we will always remember this wonderful evening. I would not hesitate to hire Edwin again and would highly recommend him to anyone looking for an outstanding chef and a memorable dining experience.

Edwin worked with my husband to create a custom menu for our anniversary. It was thoughtful and delicious.
