Professional chef creating seasonal menus with a focus on local producers, wild foraged foods, food history and international cuisines.

Louisa Mokadem is a private chef with a background in some of the UK’s most distinctive restaurants, including Brat and Sargasso.

Her cooking is generous, seasonal and ingredient-led, drawing on Modern European, Indian, Mexican and Southeast Asian food traditions alongside a longstanding interest in food history, foraging and preservation. She works closely with local growers, fishermen and producers to build menus around exceptional ingredients.

Louisa creates bespoke menus for intimate dinners, celebrations, retreats and larger gatherings across the UK. Her approach combines the standards and precision of restaurant cooking with the warmth and generosity of cooking in someone’s home, from relaxed, abundant family-style feasts to more elaborate multi-course dinners.

Alongside her private work, Louisa is a food historian and artist, creating research-led dining projects for cultural institutions including Turner Contemporary. This wider practice informs her cooking without defining it: thoughtful, distinctive food designed first and foremost to be delicious.
